Coconut Banana Berry Smoothie

After explaining what we eat, one of the first things people ask me when they start following a Paleo diet is “What do you drink?”?

My answer: water

For me water is usually all I need but it’s not the only thing we drink.

What To Drink Beyond Water

We also drink green tea, herbal tea, Bulletproof and quality coffees, homebrewed and bottled kombucha and when Jeff wants a little bubbly, he’ll turn to a bottle of perrier or Q Club Soda.

And when none of that can satisfy our thirst, we don’t turn to blood ;) but we may whip up something like this Coconut Banana Berry Paleo Smoothie.

Why This Smoothie Is Different From The Rest

The banana and blueberries add enough sweetness to the mix but I wouldn’t add any additional fruit beyond that. The bananas also make the consistency smooth.

The three varieties of coconut give this smoothie that extra kick of flavor and provide healthy fat.

I may have indulged in more than a generous shaking of a tablespoon of cinnamon, but that’s a good starting point for you.

Coconut Banana Berry Paleo Smoothie

Yield: 3 Servings

Ingredients

  • 2 bananas
  • 1 tablespoon cinnamon
  • 1 can coconut milk
  • 1 cup blueberries
  • 1/2 cup shredded coconut
  • 1 tablespoon coconut concentrate
  • 6-8 ice cubes

Directions

  1. Add all ingredients, except mint leaves, to a blender.
  2. Process until fully combined.
  3. Pour into glasses, top with a mint leaf and serve.
  4. Enjoy! :)
