After explaining what we eat, one of the first things people ask me about Paleo is “what do you drink”? My answer: water. But we also drink tea, coffee, kombucha and when Jeff wants a little bubbly he’ll open a bottle of perrier. And when none of that can satisfy my thirst, no it’s not blood ;)…I tend to make something like this Coconut Banana Berry Smoothie.
The banana and blueberries add enough sweet to the mix, the bananas also add to making it smooth and the three varieties of coconut give it that extra kick of flavor…not to mention cinnamon. I may have indulged in more than a generous shaking of a tablespoon but that’s a good starting point for ya.
When I’m craving something sweet at night or after I’ve restricted my sugar intake, a delicious Paleo green or fruit smoothie always hits the spot. :)
Coconut Banana Berry Smoothie
Ingredients
- 2 bananas
- 1 tablespoon cinnamon
- 1 can coconut milk
- 1 cup blueberries
- 1/2 cup shredded coconut
- 1 tablespoon coconut concentrate
- 6-8 ice cubes
Directions Makes 3 servings
- Add all ingredients, except mint leaves, to a blender.
- Process until fully combined.
- Pour into glasses, top with a mint leaf and serve.
