Stuffed peppers are also super easy to make. Just stir-fry some meat and veggies together with some seasonings, throw ’em in your peppers, and let the oven finish them off! This is a recipe that may look difficult as an end result but it really takes no extra effort or appliances to accomplish.

These stuffed peppers were inspired by Greek cuisine - hence the ground lamb (although feel free to use any type of ground meat you prefer or have on hand). I stuck with the Greek theme by throwing in a banana pepper and some Mediterranean herbs and spices.

Greek cuisine tends to be full of herbs and spices that contribute unique flavors to the food, making the dishes both healthy and delicious.

Pepper Stuffed Peppers

You may think the bell peppers provide all the pepper you need for one recipe, but I disagree.

I love the little kick this recipe gets from the addition of a banana pepper.

I just used one, and banana peppers are low on the Scoville scale, so it the outcome is not super spicy. Just enough to make your taste buds sit up and go “hello there!”

Prepare Your Side

Now, just because this recipe is full of veggies, doesn’t mean it’s enough to fill your quota of vegetables for the day.

Remember, the more the better, so be sure to serve these stuffed peppers with a side salad or some Herbed Celery Root Puree (which is what you see in the photos).

Greek Paleo Stuffed Peppers

Greek Paleo Stuffed Peppers

Yield: 4-8 Servings

Ingredients

  • 4 bell peppers (assorted colors for better presentation)
  • 1 shallot, minced
  • 3 cloves garlic, minced
  • 1lb grass-fed ground lamb
  • 1/2 teaspoon coriander
  • 1/2 teaspoon cumin
  • 1 teaspoon oregano
  • 1 teaspoon coarse ground sea salt
  • 1 carrot, minced
  • 1 banana pepper, minced
  • 1 cup cauliflower, shredded
  • 1 (6 oz) can tomato paste
  • 1/4 cup fresh mint, chopped
  • 1 cup filtered water

Directions

  1. Preheat the oven to 350°F.
  2. Slice peppers in half, remove seeds and transfer to a large oblong baking dish.
  3. In a 10.25-inch cast iron skillet sauté shallot and garlic over medium.
  4. After 2-3 minutes add ground lamb, coriander, cumin, oregano, sea salt, carrot, banana pepper and cauliflower. Stir to combine and cook until meat is browned.
  5. Add tomato paste and fresh mint. Stir until everything is well blended.
  6. Scoop the lamb mixture into each bell pepper. Add water to the bottom of the pan, cover with foil and transfer to the oven.
  7. Bake for 30 minutes, remove foil and cook for 15 minutes longer.
  8. Remove from oven and let rest 2-3 minutes then serve.
  9. Enjoy! :)
