Paleo gets a bad rep from folks who haven’t been educated on what the Paleo lifestyle is all about. There are some who would have you believe that Paleo is a meat-based diet. It is not.
The Paleo diet is a plant-based, whole foods diet. At times I would say we even eat more plants than a vegetarian or vegan!
We recognize the many health benefits that vegetables have to offer and we make sure to incorporate them into every meal. That is, more than 50% of our plate is designated to plants! Beef, poultry, fish and eggs are important sources of protein, but not the base of our Paleo food pyramid.
And you don’t need a thousand ingredients for every dish. From our San Diego Airbnb rental I prepared this meal.
Our little beach rental didn’t have every kitchen utensil under the sun and just the basic herbs and seasonings. It had the basic pot, pan, knife, etc and we actually didn’t even have a stove or oven. I prepared this meal entirely through the use of two portable induction cooktops and served a side salad alongside a local California steak, in addition to this asparagus dish.
Now that asparagus season is in full swing, this side dish will make a great addition to any spring meal.
With this super quick and easy asparagus recipe, you’ll have no excuse not to eat your veggies!
This recipe is so delicious, and easy to make, you may just find yourself looking forward to the vegetables as the best part of the meal.
Easy Asparagus Recipe with Sun-dried Tomatoes
- 1 bunch asparagus
- 2 cloves garlic
- sea salt, to taste
- olive oil, to taste
- sun-dried tomatoes
- Trim the ends off the asparagus and mince the garlic.
- Fill a medium sized pot 3/4 full of water, add asparagus, garlic and a pinch of sea salt. Bring to a boil and keep boiling until asparagus is slightly tender (2-3 minutes).
- Remove asparagus with tongs and transfer to a bowl. Season with sea salt and drizzle with olive oil.
- Top with sun-dried tomatoes (I used Bella Sun Luci) and serve.
