Chipotle Paleo Chicken Thighs

Typically I’m not a fan of posting recipes that have very specialized ingredients in them because I’d like for anyone who comes across my recipes to be able to get up and go to the kitchen and make them. However, this was so quick and easy plus delicious, I just had to share.

I seasoned these chicken thighs with chipotle salt but don’t you fret. If you don’t have chipotle salt hanging around the pantry, just create your own using a mixture of cayenne pepper and sea salt.

  1. I have some boneless skinless chicken breasts thawing – wondering how long I should bake them? Maybe only 1/2 an hour? I also have yellow wax beans instead of green beans. I’m going to serve with baked sweet potatoes. Yummy Fall dinner! Thanks for the recipe!

    • ooo…great substitutions with what you’ve got! If you have a meat thermometer you can start checking at the 30 minute mark and the chicken breast will be ready to eat once it’s reached at least 165 degrees F. Enjoy! :)

  2. I’m not sure but I didn’t think beans were paleo? Or is it because they grow above the ground that this kind is?

    • Hey Toby! You’re absolutely right, beans are legumes which are not Paleo however fresh green beans and fresh green peas are something I include in my diet, seasonally, because they’re so damn good! :) And, Jeff & I don’t have any problems with them. :) Head over here for a little more info.

  3. Just made this for dinner! It was amazing! Thank you so much!
