Pick up a couple whole chickens and roast them. Serve one for dinner and use the other to prepare your lunches for the week. Boom! You’ve just prepared yourself for several meals for the week.

Shredded Paleo Chicken Salad with Turmeric

I whipped up a whole chicken for dinner and Jeff & I wound up not being as hungry as I thought so I packed majority of the chicken in a storage container and came back to it the next day for lunch.

I pulled the chicken breast pieces off the chicken carcass, shredded them and added them to a bowl. Then got to work adding the onion, bell pepper and seasonings I had on hand. I bulked up this salad by adding the leftover broccoli slaw I had from making a salad the day before.

Plan Ahead

You can prepare a whole chicken or just roast (or pan fry) chicken breast a day or two ahead of time.

I mentioned making more than one whole chicken at a time. Just know that the cook time will change a bit if your oven is housing more than one bird. :)

With cooked chicken available, you can prepare several quick meals without having to wait for your main ingredient to cook. This paleo chicken salad is only one option you can prepare from the leftover roasted whole chicken. Chicken soup is another quick throw together meal you can make with cooked chicken on hand.

Great For Travel

You can easily prepare this for a picnic or during the week on your lunch hour.

If you prepare the chopped vegetables ahead of time and bring a whole avocado and a knife with you, keeping everything separate you can save on freshness by preparing everything right before you’re about to eat it.

The paleo mayo and avocado combine for extra creaminess and if you don’t have turmeric at the very least be sure to have sea salt on hand and you’ll be good to go!

Shredded Paleo Chicken Salad with Turmeric

Shredded Paleo Chicken Salad with Turmeric

Yield: 3-4 Servings

Ingredients

  • 2 roasted chicken breast, shredded
  • 1 cup broccoli slaw
  • 1/2 small sweet onion, minced
  • 2 tablespoons avocado mayonnaise (or make your own Paleo mayo)
  • 1 avocado, diced
  • 1/2 green bell pepper, diced
  • fine sea salt, to taste
  • garlic powder, to taste
  • turmeric, to taste
  • dried dill, to taste

Directions

  1. Add shredded cooked chicken breast, broccoli slaw, minced onion, paleo mayo, diced avocado and bell pepper to a large mixing bowl.
  2. Season with a shake of sea salt, garlic powder, turmeric and dried dill.
  3. Toss to combine until avocado and mayo are well combined with chicken and other ingredients. Taste to see if more seasoning or herbs are necessary.
  4. Serve cold for breakfast, lunch or dinner. Store leftovers in a covered storage container in the fridge but remember avocado doesn't stay long so try to eat within a day of preparing.
  5. Enjoy! :)
