Those breaded chicken tenders you get at fast food restaurants are definitely not Paleo. Fortunately, prosciutto is!

This recipe is so quick and easy, you’ll be making it all the time. You can eat these chicken tenders fresh out of the oven, or store them in the fridge, pack them for lunch, and even eat them cold. They travel well and they don’t require any silverware. How much more Paleo can you get?

New To The Kitchen?

This is a great recipe for beginners, because it’s so easy. All you have to do is season the chicken tenders, wrap them in prosciutto, and pop them in the oven and voila! You’re a chef!

Great For Little Hands

If you have kids, letting them help make these will be a fun way to introduce them to the kitchen and let them see what goes into preparing their food.

Chicken is an excellent source of protein, but not much else. That’s where the prosciutto comes in. Even though it’s thin and we’re only using a little, it adds great flavor to the chicken, as well as fat.

Increase Fat For Flavor

We want to add fat because eating a lot of protein without sufficient fat can lead to all sorts of health issues. When you eat more protein than you use, your body breaks it down into glucose and it can cause all the problems that consuming too much sugar can cause, such as insulin resistance.

Contrary to popular belief, eating fat will not make you fat. It actually helps boost your metabolism by keeping insulin low and promoting the breakdown of fat cells for energy.

Ingredients Matter

Be sure to check the ingredients of your prosciutto. Most of them are made with pork and salt and that is all. If you find unknown ingredients listed, leave it at the store and find a new brand because let me tell you, they do exist.

Where To Find Savory Leaves

Savory Leaves are a type of herb that are related to rosemary and thyme. It’s actually one of my favorite herbs to use and I source mine from Penzey’s.

Prosciutto Wrapped Chicken Tenders

Prosciutto Savory Chicken Tenders

Yield: 2-3 Servings

Ingredients

  • 1lb chicken tenderloins
  • dried savory leaves, to taste
  • 3oz prosciutto

Directions

  1. Preheat the oven to 350°F.
  2. Transfer the tenderloins to a plate and cover with dried savory leaves. Flip over the tenderloin pieces and season with savory leaves.
  3. Lay seasoned chicken on a piece of prosciutto, roll halfway up the prosciutto and use a sharp knife to cut the prosciutto. Transfer the wrapped chicken to a baking dish and repeat with all remaining pieces of chicken and prosciutto.
  4. Bake for 30 minutes. Serve warm.
  5. Enjoy! :)
