Corn isn’t Paleo, so how can corn husks be Paleo?
What It Is
Corn isn’t Paleo because it’s a starchy, nutrient-deficient grain that spikes our blood sugar. Corn husk, on the other hand, is just the leaves that surround the grain. It has no nutrients worth mentioning, but it also doesn’t have any antinutrients.
What It’s Used For
As with most husks, we don’t even eat corn husks. They are sometimes used to cook tamales in, but then they are discarded before eating the tamales. Since the corn husk is basically a wrapping of fiber around the tamales, we don’t need to worry about the husk imparting any antinutrients into our food. It’s just a vehicle for the main dish.
