Eat the Whole Animal
Those of us living a Paleo lifestyle know that, not only is eating meat good for us, but we shouldn’t stop at the muscle meat. Organs, bones and tendons are all full of nutrients and should be enjoyed as regular parts of our diet.
The Nutrients
We used to consume bones, along with the rest of the animal, and the fact they have largely faded from American cuisine means missing out on essential nutrients. Calcium and phosphorous are the most obvious examples of minerals to be found in bones (and bone broth/stock), but those are just the beginning. Collagen, gelatin, magnesium, sulfur, potassium, and sodium are all necessary nutrients for building and maintaining our own bones and teeth.
