Paleo Cookies

I was talking to Alison about Paleo holiday recipes and within our conversation she challenged me to create some Paleo Chocolate Crinkles.

I can never pass up a challenge! Since I had never officially tried a Chocolate Crinkle before, after experimenting a bit I invited Alison over to do some taste testing and tell me if I was on mark.

This cookie recipe is the flavor combination that received her final seal of approval.

(So if you don’t think they taste similar, talk to Alison.) ;)

Chocolate Crinkle Characteristics

For those who’ve never had Chocolate Crinkles, these Paleo Cookies have a high volume of chocolate and aren’t too sweet. The first batch I made I left out the honey altogether, and they tasted great to me, but if we were going to serve these cookies to others who don’t have the same palate as we do, we needed to add some sweetness. Enter, raw honey.

Typically, Chocolate Crinkles are coated in powdered sugar and crack on top when baked. I replaced the powdered sugar with coconut sugar and these Paleo Cookies do, in fact, crack when cooked.

These Paleo Chocolate Crinkles have an ooey-gooey center when you take them right out of the oven and pop them in your mouth. But don’t say I didn’t warn you, if you do that, you may burn some taste buds so let them rest a bit before you start munchin’. :)

Paleo Chocolate Crinkles

Paleo Chocolate Crinkles

Yield: 25 Cookies

Ingredients

  • 2 cups blanched almond flour
  • 1 cup cocoa powder, (I used Penzey's Dutch Process Cocoa Powder)
  • 2 tablespoons coconut flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon coarse ground sea salt
  • 1/4 cup coconut sugar
  • 3 large organic eggs
  • 1 teaspoon vanilla extract
  • 1/4 cup raw honey
  • 8 tablespoons unsalted grass-fed butter
  • 1/2 cup coconut sugar
  • 1/2 tablespoon tapioca flour

Directions

  1. Preheat the oven to 350°F.
  2. In a large mixing bowl combine almond flour, cocoa powder, coconut flour, baking soda, sea salt and coconut sugar.
  3. In a small mixing bowl, whisk eggs, vanilla extract and raw honey.
  4. Cut the butter into the flour and mix with a hand mixer. Pour the liquid mixture into the dry mixer and blend using the hand mixer until everything is well combined. The dough will get thick so be sure everything is well combined.
  5. Add 1/2 cup of coconut sugar and tapioca flour to a blender and mix to combine. Transfer mixture to a small bowl.
  6. Using a teaspoon, scoop some dough out of the bowl. Mold the dough with the palms of your hands to form a ball. Roll the ball to coat it in the sugar/tapioca mixture and transfer to a baking stone or rimmed baking sheet. Continue this process and space dough evenly, they will spread only slightly when cooked.
  7. Transfer the cookies to the oven and bake for 15 minutes, transfer to a cooling rack.
  8. Store leftovers in the fridge.
  9. Enjoy! :)
