While we were on our SPYR road trip, after leaving Wyoming the second time (this time after driving through Yellowstone) we made our way toward Missoula, Montana. We stayed in Missoula for a little less than a week while visiting my sister Amanda.

After several days of driving, cooking on the side of the road, staying in hotels and dining out…it was nice to have access to a kitchen again!

My sister isn’t Paleo but she isn’t far from it. She follows a whole-foods diet and makes as many meals as she can at home so her kitchen is fully equipped with any spices and kitchen appliances I would need. Plus, I had access to all the fresh grown herbs I wanted, right in her backyard. :)

Paleo Baked Eggs in Tomatoes

While staying with her, her boyfriend Jake and their brand new puppy Murphy, I made dinner for all of us on a few of the nights.

I was quite busy the entire time we were in Missoula, spending some much needed time with my sister, so I was definitely not thinking about food on most nights.

University Gyms Are Not Minimalists

During the day one day, Amanda and I worked out together at the University of Montana gym. Since she works on campus, I was able to get in with a discount…score!

I had never trained at a university campus before and I was amazed at the amount of equipment available! I took to a tiny corner of the gym for several rounds of squats after we took a barre class together.

Art Night In Missoula

That night when we were all hanging out at the house, playing with Murph, I told Amanda about how I’ve had an urge to paint recently.

She abruptly stood from her chair and sprinted inside. Less than a minute later she came back, plastic tub full of acrylic paint in her hands plus brushes and some blank canvas.

Dave and Jeff had already taken to playing with clay (and Jeff was filming for the days vlog), so I popped off the top of several paints and got to work!

Back in 2008, Jeff & I did a lot of random splatter painting to several glass fish bowls to create table decorations for our wedding. We also created art together, using spray paint on canvas, to make a three piece set for the wall in our gym when we first moved in our home. However, I have not done any legit painting like this, acrylic on canvas, since we were in high school!

It was so fun and stress relieving to just sit and think about nothing else but what I wanted that blank canvas to look like.

Once I finished painting, I was ready to head in the kitchen and make dinner and Paleo Baked Eggs in Tomatoes was the result.

What’s For Dinner?

For the last three years Amanda and Jake have been subscribers to a local CSA and last fall they canned all their remaining tomatoes.

Lucky for us, I nabbed the last jar of canned tomatoes to make this dish for dinner. With the addition of the leftover black pepper bacon they had sitting in the fridge, I didn’t season the sauce with anything more than garlic powder.

In addition to this egg dish I also made an asian salad and paired them with Sage Paleo biscuits and I didn’t want to overpower all the flavors so I kept the eggs in tomatoes very mild but still flavorful to be able to stand alone.

It may not look like it at first, but this is a very filling meal that can be enjoyed for breakfast, lunch or dinner.

Paleo Baked Eggs in Tomatoes

Paleo Baked Eggs in Tomatoes

Yield: 6 servings

Ingredients

  • 1 1/2 quarts whole tomatoes (in their juices)
  • garlic powder, to taste
  • 6 slices black pepper bacon, sliced (If you don't have pepper bacon, regular bacon will do, just season the sauce with black pepper as well.)
  • 1 dozen large organic eggs
  • 3 green onions, sliced
  • coarse ground sea salt, to taste

Directions

  1. Preheat the oven to 350°F.
  2. Pour the whole tomatoes and their juices into a 3-quart 9x13 oblong glass baking dish. (My sister had canned her own but you can use fresh or Pomi brand.)
  3. Mash the tomatoes with a potato masher or the back end of a fork. Season the tomatoes with garlic powder and toss with the sliced bacon. Stir to combine.
  4. Crack the eggs directly into the sauce, trying to give each egg its own space.
  5. Sprinkle sliced green onion on top and season with sea salt.
  6. Transfer the dish to the oven and bake for 1 hour.
  7. Remove from the oven and transfer an egg with it's juices to a bowl and serve.
  8. Enjoy! :)
