With the change from summer to fall comes all my favorite comfort food meals and the crock pot becomes everyone’s best friend. You can make use of your kitchen gem with this Lemon Pork Sirloin crock pot recipe.

I sourced my pork sirloin roast from US Wellness Meats so I know it was pasture-raised.

I highly recommend ordering from them if you’re unsure whether or not your local grocer is offering quality protein.

Plus, they deliver right to your door so regardless of whether you’re home or not, you’ll have a nice little package waiting for you when you get home.

AND you don’t have to order a whole hog straight from a farm, which tends to be the case when you order direct.

The reason I don’t do that is because it requires an additional purchase of a deep freezer, which I personally don’t have space for (although maybe you do) so anything I order from US Wellness fits nice and neat in my tiny freezer attached to my fridge.

Gosh, that sounds kind of salesy…but all I wanted to say was that they have a quality product that won’t make you sick.

Lemon Pork Sirloin Roast

Lemon Pork Sirloin

Yield: 6 Servings

Ingredients

  • 1 onion
  • 1 - 4lb pasture-raised pork sirloin roast
  • coarse ground sea salt, to taste
  • coarse ground black pepper, to taste
  • coriander, to taste
  • 4-5 sprigs of fresh rosemary
  • 1 organic lemon

Directions

  1. Cut ends off onion and peel outer layer. Cut onion in half and cut each half into thirds. Transfer onion to the bottom of a crock pot.
  2. If pork sirloin roast comes in butchers twine, remove and discard. Add pork to the crock pot and place over onions.
  3. Season the roast with sea salt, black pepper and coriander on all sides.
  4. Thread your fingers down each sprig of fresh rosemary to easily remove the needle-like leaves from the woody branch. Scatter fresh rosemary over the entire mixture.
  5. Rinse the lemon under running water and dry with a paper towel. Cut the lemon into thin slices, discard seeds, and place slices above, below and between the pork. Use the ends of the lemon and squeeze the remaining juice on top, then discard ends.
  6. Place the lid on the crock pot, turn heat to high and cook for 10-14 hours. May be best to do overnight.
  7. Serve pieces of Lemon Pork Sirloin with pan juices and additional vegetables and/or a salad.
  8. Enjoy! :)
