I’ve had a dutch oven on my kitchen wishlist for quite some time. Probably since I started cooking.

Recently, for my birthday, my sister bought one for me and this herbed whole chicken was my first recipe testing it out!

Previously I had used my Pampered Chef deep covered baker along with a large skillet.

When I originally bought the deep covered baker, I assumed it was the same thing. Sadly the baker is not made for cooking on the stove top.

So, I reverted to my two step process of browning meat in a skillet on the stovetop and transferring to the deep covered baker or a glass baking dish covered in foil when I wanted to braise meat.

Most any recipe that requires specific kitchen equipment can be made without but now that I can save on dishes by using my new dutch oven, I’m going to take full advantage of the gift.

And let me tell you, I can build up quite a lot of dishes when I step foot in the kitchen (but anyone who follows a Paleo diet would probably agree) since majority of our food is made from scratch.

I’ll enjoy having one or two less dishes to clean now that I have a cast iron dutch oven in my collection of kitchen supplies.

Dutch Oven Herbed Whole Chicken

Dutch Oven Herbed Whole Chicken

Yield: 3-4 Servings

Ingredients

  • 1 whole organic chicken
  • 2 sweet potatoes, peeled and chopped
  • 1 red onion, chopped
  • 6 cloves garlic
  • 25 fresh sage leaves
  • dried oregano, to taste
  • coarse ground sea salt, to taste
  • coarse ground black pepper, to taste
  • garlic powder, to taste
  • dried chervil, to taste

Directions

  1. Preheat the oven to 375°F.
  2. Rinse and pat the chicken dry.
  3. In a large dutch oven over medium heat (or in a large skillet if you don't have a dutch oven) brown the sweet potatoes and onion for 10 minutes.
  4. Meanwhile, stuff the garlic and fresh sage leaves the chicken cavity.
  5. Transfer the whole chicken to the dutch oven. You can move the potato and onion to the outside or simply lay it right on top. (If you do not have a dutch oven, transfer the potato and onion to a large glass baking dish along with the chicken.)
  6. Season the exterior of the chicken with dried oregano, sea salt, black pepper, garlic powder and dried chervil until it's completely covered all over the outside.
  7. Bake, covered, for 1 hour and 15 minutes or until a meat thermometer reads 165°F on the chicken.
  8. Remove from oven, uncover and let rest 5 minutes. Serve chicken with sweet potato and onion.
  9. Enjoy! :)
