Some people think a biscuit is the only way to sop up leftover juices from a meal. And those people would be wrong. Regardless, here’s a dairy-free paleo biscuit recipe for ya. :)

Personally, I rarely feel the need to serve biscuits because whenever I have leftover juices on my plate, I bring that plate up to my lips and drink whatever juice/sauce there is left.

Ladylike, I know. My mother taught me table manners but we rarely eat at a proper table, unless we’re eating out. So problem solved. ;)

Brutalist Architecture and Paleo Biscuits

I know architecture has nothing to do with biscuits but let’s just do a complete left turn for a second and talk about something non-cooking related.

Upon walking into the GM Renaissance Center building in Detroit (which you can see in the photo below), you know there’s something different about it. I’ve never been in the World Trade Center buildings but I would assume it’s similar to how they were.

The Renaissance Center is setup as a group of seven interconnected skyscrapers in Downtown Detroit located along the riverfront. You can see a few shots of the outside and inside of the building near the beginning of Paleo Porn VLOG episode 010.

Why Is It So Different?

The thing that makes the building unique is the use of cement. It’s everywhere. The walls, slanted walkways, pillars…everything is made from cement.

This building style can be referred to as brutalist architecture. It was a movement that originated between 1950-1970.

“Brutalist buildings are usually formed with repeated modular elements forming masses representing specific functional zones, distinctly articulated and grouped together into a unified whole. Concrete is used for its raw and unpretentious honesty, contrasting dramatically with highly refined and ornamented buildings.” (source)

We also saw this type of architecture while walking around Toronto. While we were there, Dave listened to an episode of 99% Invisible that Jeff was familiar with. The podcast episode was all about brutalism. If you’re interested in listening and learning more, check out this in depth 99% Invisible Episode 176: Hard to Love a Brute.

Synergistically, The Verge recently did an interview with LA-based band YACHT (a duo who produces futuristic dance music). While walking around Los Angeles looking at buildings that were built and pretty much abandoned they wound up in the Westin Bonaventure Hotel & Suites. This hotel has apparently been in dozens of movies, most recently Interstellar (which we highly recommend you see if you haven’t already!). The Bonaventure is yet another example of brutalist architecture.

I think it’s really cool when you learn something new and then start to see it everywhere.

Back To The Biscuits

I already have a Paleo biscuit recipe and similarly a paleo quick bread recipe. They’re both awesome and tasty, but they also both use butter.

For those who are eliminating dairy from their diet, as I’ve recently been doing, you may want a recipe that you don’t have to adapt. Instead of butter I used coconut oil.

And if you don’t have rosemary feel free to substitute with your favorite herb. I prepared these biscuits alongside this Paleo Pork Curry recipe.

Rosemary Paleo Biscuits

Rosemary Paleo Biscuits (Dairy Free)

Yield: 6 oversized muffins

Ingredients

  • 1 cup tapioca flour
  • 3 tablespoons coconut flour
  • 1 teaspoon coarse ground sea salt
  • 1 teaspoon garlic powder
  • 1 teaspoon dried rosemary
  • 2 teaspoons coconut oil
  • 4 small eggs, beaten
  • 1/4 cup water

Directions

  1. Preheat the oven to 350°F.
  2. Add tapioca flour, coconut flour, sea salt, garlic powder and dried rosemary to a large mixing bowl. Stir to mix well.
  3. Add coconut oil, beaten eggs and water to the bowl and stir to combine liquid with dry ingredients.
  4. Add parchment paper cups to six large muffin tins. Pour batter evenly between them.
  5. Transfer to the oven and bake for 30 minutes. Remove tray from the oven and let rest 1-2 minutes before serving warm. Note: After letting the biscuits rest they may deflate in size.
  6. Enjoy! :)
