When you just need to get dinner on the table quickly, this easy, throw-together salad will help you get your vegetables in without spending all day in the kitchen.

We all know we should be eating lots of vegetables, but it can be easy to run out of time. If your idea of vegetables are limp, flavorless salads, or boiled mush, it can be even more difficult to get up the motivation to prepare something healthy for your next meal.

Salad Doesn’t Have To Be Boring

This Creamy Broccoli Slaw makes it easy. You can throw it together quickly and it’s delicious.

This recipe makes two servings, but it can easily be scaled up or down to suit your needs. Or if you’re really hungry, you can eat the whole thing yourself and know you’re getting one hefty dose of veg! :)

While many of those on the conventional wisdom path might be eating salads for their low-fat qualities, I packed some extra fat into this salad. An avocado and a drizzle of olive oil make this slaw so rich and creamy you’ll forget it’s healthy.

More Fat Please

The Paleo diet is a high-fat diet, but it’s also a high-vegetable diet. You might think those two things are contradictory, but this recipe is here to prove you wrong.

By eating vegetables with a healthy dose of fat, we’re not only making them delicious, we’re helping kickstart our metabolism into (or keep it in) a fat-burning state.

Broccoli Slaw Salad

Creamy Broccoli Slaw

Yield: 2 Servings

Ingredients

  • 2 1/2 cups (8oz) bag of organic broccoli slaw
  • 2 plum tomatoes, chopped
  • 1 avocado, cubed
  • 1 small zucchini, chopped
  • 1 tablespoon balsamic vinegar
  • coarse ground sea salt, to taste
  • extra virgin olive oil

Directions

  1. Add broccoli slaw, tomato, avocado and zucchini to a large mixing bowl.
  2. Add balsamic vinegar, season with sea salt and drizzle with olive oil. Toss to combine and taste to check for additional salt.
  3. Split between two plates and serve.
  4. Enjoy! :)
