Any boxed cereal you buy (well, almost anything you buy in a box, for that matter) should not be considered healthy, let alone Paleo.

Paleo Breakfast Options

I have no problem regularly eating eggs for breakfast, drinking Bulletproof coffee or skipping the meal altogether, but if you’re one of those people who still gets a craving for cereal every now and then, I have the solution for you.

Paleo Cereal

Some Paleo cereals consist mostly of nuts.

Jeff & I have no problem consuming nuts, but we don’t recommend eating them by the bowlful (plants, animals, nuts & seeds in that order, remember?).

That’s why I used coconut flakes for the base of this recipe.

A Fatty Breakfast Bowl

Coconut flakes are an excellent source of fat, protein, and all sorts of vitamins and minerals.

There’s a reason it has enjoyed a rise in popularity as a health food lately.

It may not enjoy that status for long in our fickle society, but hunter-gatherer societies have been known to live primarily off of coconut.

Breakfast or Dessert?

I’ve prepared many different versions of this recipe for both breakfast and dessert.

Most recently I prepared this recipe for dessert when we had a homemade Paleo dinner with our friends Spencer & Ana. That should help explain why the cereal is pictured with salad and tostadas.

The following week after we dined together, Ana prepared it again for breakfast, this time with her own spin of toasted coconut flakes and a chopped Granny Smith apple.

Keep Your Sugar In Check

I tried to keep the sugar in this recipe to a minimum, but it’s still pretty sweet.

Between the fruit and the maple syrup (and the chocolate chips, if you choose to include them) this cereal is truly best served as a dessert, rather than breakfast, since you don’t want to start your day with too much sugar.

But when those crunchy cereal cravings come a callin’ just leave out the maple syrup and chocolate chips and you’re good to go. Regardless of whether you keep them in or not, it’s still better than the sugar-laden boxed cereal alternative. ;)

Rather than eating a big bowl of this stuff (which you probably won’t want to do anyway, because it’s so filling) you’re better off with a small serving alongside a breakfast salad and/or bacon.

Banana Coconut Paleo Breakfast Cereal

Banana Coconut Paleo Breakfast Cereal (or Dessert!)

Yield: 6-8 Servings

Ingredients

  • 4 bananas, sliced
  • 1 lemon, juiced
  • 3 cups coconut flakes
  • 1 pomegranate, seeded
  • 2 tablespoons pure maple syrup, Grade B
  • cinnamon, to taste
  • fresh mint, minced
  • 1 cup Enjoy Life mini chocolate chips (optional)

Directions

  1. Lay sliced bananas flat in a glass baking dish or parchment paper lined baking tray. Squeeze lemon juice over the top of the bananas and transfer them to the freezer. Freeze sliced bananas overnight or up to 2 hours before serving.
  2. In a large mixing bowl combine coconut flakes, pomegranate seeds, maple syrup, cinnamon, fresh minced mint and chocolate chips, if you're using them. Toss to combine and mix everything well.
  3. Once bananas are frozen, add to the bowl and toss to combine.
  4. Scoop desired amount of cereal into a bowl and serve.
  5. Enjoy! :)
