I host dinner on Christmas day every year. Each year I pick a theme and explore the cuisine of a different country. This year my theme was Polish food.

Unfortunately I don’t know the tradition behind serving this salad but I can tell you that it’s very simple to make.

Red Cabbage with Apples Salad - Czerwona Kapusta z Jabłkami

The best part about exploring other cuisines is seeing how other people use ingredients. Red cabbage, which I refer to as purple cabbage (because really look at it…it’s purple!) is something I rarely cook.

I enjoy adding chopped purple (and green) cabbage to our big ole’ salads and making paleo coleslaw with it but I was never a huge fan of cooked cabbage.

Is That Really Pink?!

Yes, it’s definitely pink! This purple cabbage salad completely threw me for a loop.

The color actually seems quite fitting, and festive, for the month of February. Especially with any of the Valentine’s Day celebrating crowd. :)

The reason this salad surprised me is because the purple cabbage changed colors on me! After it is cooked and is allowed to sit and once the lemon juice is poured over it, that’s when this tricky ingredient plays its color-changing magic trick.

I served this salad as one of the sides for dinner when we were hosting for 12 people so this recipe makes a lot of salad.

We stored the leftovers in the fridge, where we were able to enjoy eating it cold straight out of the bowl for the rest of the week. :)

Red Cabbage with Apples Salad - Czerwona Kapusta z Jabłkami

Red Cabbage with Apples Salad (Czerwona Kapusta z Jabłkami)

Yield: Serves 10-12

Ingredients

  • sea salt
  • 1 small red cabbage, shredded
  • 1 tablespoon raw honey
  • 2 lemons
  • 2 apples, peeled and shredded

Directions

  1. Place a large pot of salted water over high heat and bring to a boil.
  2. Add the shredded cabbage to the boiling water and allow to cook for 5-7 minutes. Drain, transfer to a large serving bowl and allow to cool.
  3. Once the cabbage is cool, add the honey to a small saucepan over very low heat and melt.
  4. Meanwhile, juice the two lemons and add to the cabbage along with the melted raw honey. Add the shredded apples and toss to combine until dressing is evenly coated.
  5. Refrigerate for 1 hour prior to serving.
  6. Enjoy! :)
