When I asked my mom what I could make for a family gathering she asked me to bring a bean salad. Being that we’re Primal and don’t typically eat beans, only a couple options remained with what we had in our pantry.
I made do with what I had in our “reserves” and I was really happy with how it turned out :)
Two Bean Salad
Ingredients
- 1 canĀ cannelloniĀ beans
- 1 can black beans
- 2 stalks celery, sliced
- 3 cloves garlic
- 3 hard boiled eggs
- 6 stalks of green onion, chopped
- 1/2 green pepper, chopped
- fresh cilantro, chopped
- sea salt, to taste
- coarse ground black pepper, to taste
- paprika, to taste
- extra virgin olive oil
- apple cider vinegar
Directions
- Combine all ingredients in a large mixing bowl.
- Chill in refrigerator for least one hour before serving.
- Enjoy! :)
