Two Bean Salad Recipe

When I asked my mom what I could make for a family gathering she asked me to bring a bean salad. Being that we’re Primal and don’t typically eat beans, only a couple options remained with what we had in our pantry.

I made do with what I had in our “reserves” and I was really happy with how it turned out :)

Two Bean Salad

Ingredients

  • 1 canĀ cannelloniĀ beans
  • 1 can black beans
  • 2 stalks celery, sliced
  • 3 cloves garlic
  • 3 hard boiled eggs
  • 6 stalks of green onion, chopped
  • 1/2 green pepper, chopped
  • fresh cilantro, chopped
  • sea salt, to taste
  • coarse ground black pepper, to taste
  • paprika, to taste
  • extra virgin olive oil
  • apple cider vinegar

Directions

  1. Combine all ingredients in a large mixing bowl.
  2. Chill in refrigerator for least one hour before serving.
  3. Enjoy! :)

Want to make this Paleo? Remove the beans and add some chopped bacon. Everything goes well with bacon. ;)
