Star fruit is a fruit imported to the U.S. from Asia that, when sliced, has a star shape. It’s high in sugar, but it’s also low on the glycemic index, probably because of the fiber it contains. The fiber also helps feed the beneficial bacteria in our guts (the guys we want to stick around), so there are plenty of reasons to eat this little fruit.
