We’ve all heard how eating saturated animal fats will clog our arteries and send us to an early grave. The good news is there’s no scientific evidence to back up these claims. On the contrary, recent studies have found that eating saturated and monounsaturated fats, while limiting polyunsaturated fats, is actually extremely beneficial to our health.

Stable vs. Unstable Fats

Saturated and monounsaturated fats are very stable, which means they are less likely to oxidize when exposed to heat and light. This is great news, because it is the oxidized fats that lead to increased oxidized cholesterol in our blood, so we can eat food that tastes better and be healthier!

The Fat Profile of Duck

Duck fat consists of mostly monounsaturated fat, about a third saturated fat, and only a small amount of polyunsaturated fats, making it excellent Paleo fare. Mark Sisson includes duck fat in his guide to animal fats.
