Cilantro is the leafy part of the coriander plant. They are often used as an herb and, like most herbs, come packed with nutrients. Cilantro in particular is an excellent source of vitamins A, C, K, and various B vitamins. It also has moderate amounts of iron and manganese, so feel free to load up on the stuff. You can use it whenever you make your own salsa, guacamole, stir-fry, or salad.
