A Nutrient-Dense Food

Buffalo, in particular, is an excellent source of protein, iron, and omega 3 fat. Although omega 3 is a type of polyunsaturated fat (which we normally avoid), it conveys a number of health benefits, most of which are associated with its anti-inflammatory effects. The Standard American Diet has gotten much too high in polyunsaturated fats in recent years, particularly omega 6 fats, which are inflammatory. In order to stay healthy, we need to maintain the proper balance between omega 3 and omega 6 fats, which usually means eating them in at least a 1:1 ratio.
