Apples are Paleo, so it stands to reason that Apple Cider Vinegar (a.k.a. “cider vinegar” or “ACV”) would be Paleo as well, and it is. ACV is made by crushing apples to extract the liquid, which is then fermented twice to convert the apple cider into vinegar.

Paleo and Fermentation

Although fermented foods are not strictly Paleo (our ancestors did not figure out how to ferment until around the same time they started experimenting with this crazy new thing called agriculture), that doesn’t mean they can’t have a place in our modern Paleo lifestyle. Adding fermented foods into our diet can serve as a potent probiotic, meaning they introduce beneficial bacteria into our gut. Since gut health has been linked to everything from immune function to skin rashes, it is definitely in our best interest to maintain a healthy gut biome.

Health Benefits of ACV

There are even studies that show that consuming ACV right before a carb-heavy meal can reduce the postprandial spike in blood sugar and can increase insulin sensitivity (Source).
