Mile High Steamin Veggie Pie

Happy Monday! Well maybe Monday’s aren’t happy for all and just because the Bears lost doesn’t mean Monday can’t be great but I tend to be the most motivated on Monday’s, so yeah…Happy Monday! On with the food…

Last week was super busy over here but I’ve been making great progress with my Paleo Vegetarian challenge so once I get a chance to get everything typed up, I’ll have plenty of fun recipes to share. Today some Paleo Porn will have to do.

Friday night was a working night for us and earlier in the week I roasted 4 humongous sweet potatoes to have as a grab-and-go snack or a side to a meal. That made things much easier. If you spend one day putting together meals and having a cooking marathon to prepare for the week, I’d highly recommend adding some sweet potatoes to that list.

For dinner I cooked up a sweet potato-red onion-fresh garlic-yellow pepper hash and served it as a veggie taco filling over a crunchy baked kale chip.

We still had some leftover french onion soup that I had made earlier in the week, so I served that on the side with the taco. I had previously pinned the recipe for the french onion soup, thanks to my friend Michelle, and had been waiting for the right time to make it. Since it’s a two day process, it took some forethought and with a little planning it turned out delicious.


The onions caramelize for 12 hours in the crockpot on day 1 and then I put everything together to make the soup on day 2. Of course I made a few changes to the recipe, but it’s pretty much Paleo as it stands. (Replace the soy sauce with tamari or coconut aminos, get rid of the bread altogether or replace with a slice of Paleo bread, and top it with cheese if you’re cool with that. I used what I had on hand and that was Asiago.)


Saturday we hung out with Magda to celebrate her birthday. I may or may not have done one or two or three shots of Polish vodka to celebrate. One of those shots just so happend to have been served up in their newly remodeled bathroom…an added celebration. :) I’ve gotta start building up my vodka stamina to celebrate with Rafal & Magda at their wedding next summer in Poland! ;)


Sunday sounded like a good day to veg up so I loaded the biggest frying pan I’ve got with a good helping of eggs, spinach, asparagus, red onion and fresh dill plus some dried oregano and basil to make this mile high steamin veggie pie, or you may just call it an omelet. Plus I’ve been slacking on making meat for Jeff so I fried up some bacon, and of course had to sneak a slice. It’s bacon! :)
